After searching for quality matcha at a myriad of local markets and cafe's but coming up short, Extraction Tea was founded.

We conducted extensive research into Japanese tea farms, regions and producers and have partnered with the best.  We're excited to provide our clientele with an unparalleled quality of matcha across a variety of options, price points and levels so everyone from the baker, occasional latte drinker and tea master has an option that suits their needs.

ORIGIN

All of our core organic matcha options (Konomi Reserve, Prime Estate, Barista Select, Kokoro Blend & Maker’s Choice) are cultivated on a single estate organic farm in Kagoshima, the second largest tea producing region after Shizuoka. The teas are grown in forested areas, about 500 meters above sea level, home to plenty of wildlife.  Mineral-rich water from the Kirishima mountain range is stored in the farm's reservoir and used to irrigate the organic tea garden.  The vast lands, high altitude, abundant sunshine and rain, dense fog, big difference in day and night temperatures, are some of the many natural environmental factors characteristic of Kagoshima that contribute to the premium quality of our organic matcha.  This combined with the endless efforts put in by our farmers dedicated to cultivating safe, quality organic teas through their comprehensive soil management and absolutely chemical-free organic farming make for some of the world's best matcha.

NO SHORTCUTS

The top four leaves of the first eight leaves that sprouted by the twentieth day of shading in Spring are carefully picked for our Matcha. Although the first eight leaves make good quality matcha, we insist on using only the top four leaves, which have the deepest umami taste, strongest aroma, most vivid green color and are at their tenderest, resulting in a matcha which is extremely creamy and smooth, with a thick foam. This is not possible if older and lower quality leaves are used.

Analytical tests show that our organic matcha has an L-Theanine content as high as 4,000mg/100g. This is because our farmer waits 5 years instead of the industry standard of 3 years for their plants to grow before harvesting, allowing the roots to grow deeper into the ground, absorbing maximum nutrients to produce beneficial glutamates, including L-Theanine.
